# Keto fried calamari

4 adult servings · US imperial measures · keto · 30 min active per base batch · 45 min

Almond-crusted fried squid rings with lemon-garlic mayonnaise.

Continuous frying attention; turn each batch once and check squid at 145°F. Larger quantities need additional batches.

The listed pan and basket capacity, cook times, and thermometer endpoint are for four servings.

Ingredients are scaled; keep food thickness, spacing, settings and safe endpoints fixed. Timings assume the four-serving batch and specified shortcuts. More food can require additional batches.

## Ingredients

- 680 g / 1.5 lb Cleaned squid tubes — raw, thawed; cut into 1/4-inch-wide rings. Use cleaned tubes, not whole uncleaned squid. Thaw in the refrigerator, drain and pat completely dry before coating.

- 1 cup / 96 g / 3.39 oz Blanched almond flour — finely ground. Use a fine flour rather than coarse almond meal. Coat only the next panful just before frying.

- about 1 large egg / 50 g / 1.76 oz Beaten whole egg — raw, beaten. Beat whole eggs, then weigh the listed portion. Discard unused egg wash after coating.

- about ½ cup / 108 g / 117 mL Refined canola oil — as purchased. Use a refined oil suitable for frying. Reserve some of the measured oil for small top-ups between batches; do not add unmeasured oil.

- about ¼ cup / 60 g / 2.12 oz Regular mayonnaise — ready to eat. Choose a no-added-sugar product. Check the label for egg, soy and other allergens.

- juice of about ⅝ lemon / 30 g / 29 mL Lemon juice — raw, unsweetened. Mix into the mayonnaise dipping sauce.

- about 1 lemon / 60 g / 2.12 oz Lemon wedges — washed, cut for serving. Serve alongside the calamari. The estimate conservatively counts the full listed wedge weight as edible lemon flesh.

- 1 tsp / 3 g / 0.11 oz Garlic powder — ground. Use half in the almond coating and half in the sauce.

- ½ tsp / 3 g / 0.11 oz Fine salt — dry. Mix into the almond coating.

- A pinch Black pepper — ground. Mix into the almond coating.

## Equipment

- Heavy 10-inch skillet for four servings, or an 8-inch skillet for two

- Frying thermometer

- Thin-tip instant-read food thermometer

- Dry slotted utensil, clean tongs and a wire rack over a tray

## Cook

Prepare cold sides first. Keep raw-poultry tools separate; use clean serving utensils. Probe more than one thick piece. A timer is not a doneness test.

1. **Prepare the squid and coating.** Thaw cleaned squid in the refrigerator, drain and pat completely dry. Cut the tubes into 1/4-inch-wide rings. Beat and weigh the egg. Mix almond flour, salt, black pepper and half the garlic powder in a shallow dish. Keep the squid and egg chilled until coating.

2. **Mix the dipping sauce.** In a clean bowl, stir mayonnaise, lemon juice and the other half of the garlic powder. Cover and refrigerate while frying. Keep the sauce and its utensils away from raw squid and egg.

3. **Heat the oil.** For four servings, use a heavy 10-inch skillet with a base about 8 inches across. Use a smaller 8-inch skillet for two servings. Heat enough of the measured refined canola oil to make a shallow layer about 1/8 inch deep, reserving any rest for small top-ups between batches. Never fill the pan more than one-third deep. Heat the oil to 350°F and monitor it with a frying thermometer.

4. **Coat and fry in batches.** Coat only the next panful at a time: dip rings into beaten egg, let excess drain, then press lightly into the almond mixture and shake off loose flour. Fry one uncrowded layer, about four batches for four servings. Turn once after about 1 minute; allow roughly 2–3 minutes total per batch, continuing until the thickest squid reaches 145°F for at least 15 seconds and the coating is golden. Check with a thin-tip food thermometer. Oil temperature, squid thickness and coating can change the time; the endpoint decides doneness. Adjust heat to hold about 350°F and allow oil to recover before the next batch.

5. **Drain and serve.** Use clean tongs to transfer cooked calamari to a rack over a tray. Skim loose browned crumbs between batches with a dry slotted utensil. Serve promptly with the chilled sauce and lemon wedges. Discard remaining raw egg wash and dredge. Allow used oil to cool fully before handling or disposal.

## For a shared table

Serve the calamari for everyone. Offer fries, bread or pasta in separate dishes so each person can build their own plate. Keep dipping sauces on the side; base nutrition includes the measured lemon-garlic mayonnaise.

## Attention timeline

- Dry, slice and prepare: 15–20 min. Dry the squid thoroughly; mix coating and chilled sauce.

- Heat oil and fry batches: 15–20 min. Monitor oil continuously, turn each batch once and check the seafood endpoint.

- Drain and serve: 5 min. Serve promptly; larger quantities need more batches.

Stages can overlap; endpoints and appliance behavior override the estimate.

## Flavor and capacity

A thin almond crust adds crunch; lemon and garlic balance the fried squid.

- Almond flour browns readily. Keep the oil near 350°F, skim browned crumbs and coat each batch only when the pan is ready.

- Use dry utensils around hot oil, lower rings gently away from you and keep water away from the pan.

- For six or eight servings, keep the same pan and uncrowded layer; fry additional batches and reserve the extra measured oil for top-ups. Total time can increase.

If the coating browns before the squid reaches 145°F, lower the oil temperature and finish that batch to the safe endpoint. Do not use coating color or a fixed timer as proof of doneness.

## Nutrition per serving

per serving (1/4 of prepared batch)

Calories: 663 kcal; protein: 33.6 g; fat: 53.8 g; total carbs: 13.2 g; fiber: 3.5 g; net carbs: 9.6 g

Per adult: base includes measured sauces, seeds and sides. Optional side nutrition is separate from the base meal. US net carbs = total carbohydrate − fiber − documented erythritol. Labels and food variation matter; no guarantee of ketosis.

Fat estimate: Ingredient total fat observations at measured edible weights; no calorie residual inference.

Known allergens for these plates: molluscan shellfish (squid), tree nuts (almond), egg, soy. Check product labels and cross-contact.

## First-cook checks and limits

- This household adaptation has not been kitchen-tested; coating texture, oil use and cooking times are estimates.

- Nutrition counts all measured oil, almond flour, egg wash and lemon-wedge weight even when some remain in the pan, bowl or on the plate. Actual intake can be lower; no absorption or dredge-retention measurement is claimed.

- The almond-flour nutrient profile uses the established USDA whole-almond proxy. Mayonnaise and flour brands can differ. Check every packaged ingredient label for additional allergens.

## Leftovers

Refrigerate in shallow containers within two hours, or one hour above 90°F. Use within 3–4 days or freeze; reheat to 165°F. Keep cold greens and yogurt separate.
