Before you start

Prepare cold sides first. Keep raw-poultry tools separate; use clean serving utensils. Probe more than one thick piece. A timer is not a doneness test.
Cook
- Step 1
Heat olive oil over medium-high. Season salmon with part of the salt and pepper. Sear flesh side first, about 5 minutes per side or until cooked to the source preference; set aside.
- Step 2
Melt butter in the same skillet. Fry garlic about 1 minute; add onion and cook until translucent. Add drained tomatoes for 1–2 minutes, then broth; reduce slightly.
- Step 3
Lower heat and gently simmer cream, seasoning with the remaining salt and pepper. Wilt spinach, stir in Parmesan and simmer 1 minute to melt.
- Step 4
Return salmon, scatter parsley over it and spoon sauce over the portions before serving.
