Brown sliced smoked sausage in a large skillet over medium heat for about 5 minutes; set aside.
- Step 2
Add olive oil and stir-fry carrots 4 minutes. Add shallot, garlic, spring onions and peas, then salt, pepper, Italian herbs and Cajun seasoning. Continue until vegetables are crisp-tender.
- Step 3
Add chicken broth to loosen browned juices. Return sausage, toss and heat through; finish with optional chili flakes and parsley.
